Pumpkin Scone Recipe

I love a good pumpkin scone with a kick of spice. I've had my fair share of scones and often find they are a tad too dry. These on the other hand, are perfectly crispy on the outside and soft on the inside.

Makes 8 scones

Ingredients

  • 1 3/4 cup flour
  • 1/3 cup brown sugar
  • 2 tsp baking powder
  • 2 tsps cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 cup + 1 Tbsp unsalted butter
  • 2 tsps vanilla extract
  • 1 Tbsp molasses
  • 1 large egg
  • 1/2 cup pumpkin purée
  • 1/4 cup greek yogurt
  • 1 Tbsp milk

Glaze

  • 1/2 cup icing sugar
  • 1 1/2 Tbsp pumpkin purée
  • Pinch of pumpkin spice mix

Directions

Preheat oven to 400°F. Line baking tray with parchment paper.

Mix dry ingredients together in a medium bowl.

Add in butter and keep mixing.

Add in the vanilla extract, molasses and egg and mix.

Add in the pumpkin purée and greek yogurt and mix.

Place dough onto sheet and shape into an 8 inch disc. Cut into 8 wedges and brush with milk.

Bake for 12 - 15 minutes and then cool. Edges should be crisp and the middle soft.

Mix the glaze and pour gently onto scones.
